Quick post since I have to leave the house really quickly!
KODO taiko members are visiting the community center for a pot luck tonight I originally wanted to make some vietnamese style spring rolls for some healthy but someone else got the same idea hahah😄
I decided to make fried dumplings: vegetarian style and pork.

To make them really vegan-friendly though, I omitted the egg. I also didn’t have cabbage handy so I used nappa cabbage. After tasting it though, I definitely think 3 shiitake mushrooms is NOT enough since it tasted like I was only eating quinoa. Even after adding 5 of them, the ratio of quinoa to mushroom was too much. Next time I’ll probably half the quinoa, double the mushrooms and maybe up the garlic/onion depending on how it tasted then.
The pork dumplings were made with minced pork, shiitake mushrooms, 4 stalks of green onions, garlic, salt and pepper. My dad helped me fry them since I was short on time today. He prefers just crisping the bottom side of the dumplings before steaming while I like frying the two sides. Still not a super good dumpling maker yet but at least I don’t think I had any open ones😀
